Biscuits Cookies Recipes
Cookies or biscuits as they are known are usually baked until they are crisp or just for some time till they are soft. However, there are some cookies which are not at all baked. There are different biscuits cookies recipes wherein various styles, different ingredients such as spices, sugars, butter, chocolate, peanut butter, dried fruits and nuts are used in making them. The softness of these cookies basically depends on the time they have been baked for.
There are different biscuit cookie recipes for the different types of cookies. Depending on the way they are made they can be classified as:
Refrigerator cookies: The dough used for making these cookies is quite stiff however it is refrigerated to make it stiffer. They are then shaped like cylinders and then sliced into cookies for baking. Pecan cookies recipes usually adapt this form for making the dough.
Drop cookies: In this kind of a biscuit cookie recipe the cookies are made from very soft dough which is dropped using rounded spoons on the cookie baking sheet. While they are getting baked the dough tends to flatten. Chocolate chip cookie is one example of drop cookies.
Rolled cookies: Even these are made from stiffer dough which is firstly rolled out and then cut into different shapes using a cookie cutter.
Molded cookies: Again made from stiffer dough they are molded into cookie shapes or balls by hand and then baked. Peanut butter biscuit or cookie is a good example of molded cookie.
Pressed cookie: Pressed cookies are made from relatively soft dough and are extruded through cookie press. You can get different decorative shapes for baking.
Sandwich cookies: They are either pressed or rolled cookies which are then assembled like sandwiches containing some sweet filling. Fillings could include jam, marsh mellows or even icing.
Bar cookies: They are made from a batter or some other ingredients which are poured into a pan (either single layer or multiple layers). Once this is baked it is cut into pieces. Brownies are perfect examples of bar cookies.
