Ingredients 2 tablespoons butter 1 small onion ½ cup celery 1 small carrot A few pieces of fish (bones removed) 1 teaspoon salt 4 white peppercorns 1 teaspoon dried thyme leaves 1 teaspoon parsley 1 bay leaf 6 cups water

Method Melt butter in a cooker. Add onions, carrot and celery. Stir fry till onion is transparent, then add rest of the ingredients and stir. Close cooker and bring to full pressure on high heat. Reduce heat and cook for 15 minutes. Remove cooker from heat and allow to cool naturally. Open the cooker and discard the thyme and bay leaf before serving it.
