Nearly all vegetables are curried in the same way as in all basic Coconut Curry Recipes for vegetables. Wash, pare and cut the vegetable into suitable size pieces. Place the vegetable in a cooking pot and add the following ingredients: Sufficient quantity of the 2nd extract of coconut milk made from grated coconut about ½ cup. A few sliced small red onions A sliced clove of garlic (optional) A sliced green chillie A small stick of cinnamon A slice of green ginger A dash of turmeric Some Maldive fish chips (optional) Curry leaves, and rampe (an edible pandanus) Salt to taste A dash of raw curry powder usually coriander and cumin specially prepared for vegetables Adjust the quantities according to the quantity of vegetable that is to be cooked. Cook till the vegetables are no longer raw and finish off with a little thick coconut milk sufficient for a thick gravy and bring to the boil. Put off the heat and sprinkle a little toasted sweet cumin powder on the prepared vegetable curry.

The potato curry is ideal for those who find some of the main curries too hot to handle as it reduces the heat to a great extent and some venture on to continue enjoying the irresistible hot curry.

There are Recipes for Fish as well and can be cooked in the same manner with the addition of a little ground mustard or mustard powder. Some Recipes can be 'tempered' for added flavour. The way to do this is to sauté a few slices of onion, garlic, curry leaves, a little mustard seed and a little sweet cumin seed in some heated ghee or clarified butter until the onions are lightly browned and the seeds have popped.
