You will need 1 pound of skinned chicken breasts which are diced into bite-size cuts, 2 potatoes which are peeled, diced and chopped into small pieces, 10 carrots cut in half, 2 table spoons of oil, 2 table spoons of curry paste, but the paste can also be exchanged by curry powder. Also you will need 1 cup of chicken broth, 1 spoon of sugar. You will also need salt and black, red or white pepper to adjust the curry to the desired taste.
The cooking process begins by heating a frying pan over high heat. Add the 2 tablespoons of oil to the pan and let it heat. After the oil as heated add the onion and stir the mix until the onions softens and starts to have a golden translucent color. Afterwards add the curry paste and start to stir the concoction. If you are using curry powder instead of the curry paste you should add some water so that the powder becomes paste. Add the chicken breasts and let them fry until the breasts receive a brown color. Occasionally stir them so that they become covered with the curry paste. Then it is time to add the potatoes and carrots, when you add them keep stirring for a minute and afterwards add the sugar, salt, broth and pepper and keep cooking everything for about 15-20 minutes at low heat. After that, just taste the finished meal and add some seasoning herbs to adjust the taste and then it is time to serve one of the easiest, though tastiest curry dishes in the world.
