Ingredients: 400 gm Yogurt 150 gm Korma curry paste 2 kg chicken, cut into pieces, excess fat trimmed 1 tablespoon vegetable oil 2 onions, medium sized, thinly sliced 2 tomatoes, large sized, roughly chopped 100 gm baby spinach leaves Coriander to garnish

Preparation: On a Stove Top Mix yogurt and Korma curry paste in a large bowl. Apply it on chicken pieces with a brush and cover with a plastic wrap. Place it in the fridge for 30 minutes to marinate. Heat oil in a stock pot and on medium heat and add onions. Fry the onions until they are golden brown. Add the chicken and stir to mix well. Use low heat. Avoid bringing this preparation to boil or it will spoil the yogurt. Add tomatoes, stir and cook for 30 minutes or until the sauce thickens and the chicken is cooked. Add spinach leaves and stir for an additional 2 minutes. Place the curry in a large serving bowl and garnish with coriander.

In a Slow Cooker Use a frying pan to fry onions and mix marinated chicken. Place the chicken mixture along with tomatoes and spinach in a slow cooker. Cook on low heat for about 6 hours or until the chicken is tender. In a Casserole Dish After marinating the chicken, preheat oven to 160 degrees C. Using frying pan or heatproof casserole dish to fry onions and mix chicken. Bake chicken and onion mixture in oven, uncovered for 1 hour or until chicken is tender. Add tomatoes and spinach and mix vigorously until spinach appears to wilt. In a Pressure Cooker Follow same instructions as preparation in a casserole dish. Cooking time in pressure cooker is about 15 minutes. If the pressure cooker begins to whistle before that, turn the heat down to low. Best served with Steamed rice, accompanied by poppadums.
