Pepper Soup Recipes During the winter season we all look forward to having a bowl of hot soup. There is nothing that can beat pepper soup recipes and bean soup recipes. These recipes may seem difficult and messy to many, but on the contrary it is easy and quick.

Pepper if purchased at supermarkets work out expensive. They are abundantly available in your local market at a much cheaper price. Another advantage of buying at a local market is you can buy mixed pepper as the local trader unlike in supermarkets which do not sell them separately and do not separate them in case you need mixed variety of peppers.

Peppers are healthy as they are high in vitamin A and Vitamin C. Additionally, they freeze well in soups. Many of us consume pepper in various dishes and pepper soup recipes make great appetizers.

Here is a pepper soup recipe which uses roasted pepper as the chief ingredient.

You will need 6 Red Peppers 2 litres boiled water 4 carrots finely chopped 2 to 3 chicken stock cubes 4 celery sticks finely chopped 2 onions 2 potatoes peeled and chopped 4 garlic cloves 400 Gms tomatoes Handful of roughly chopped basil leaves Salt and grounded black pepper

Procedure Deseed the pepper and remove the stalk. Brush little olive oil and season it with grounded black pepper and rock salt. Bake it in a preheated oven for 20 to 25 minutes on a baking tray, till the skin turns black and can be easily pulled. Let it cool before you start peeling its skin off.

In case some skin is still left, place the pepper in a sealed plastic bag for 15 minutes. This way the skin will come off easily. Now chop the pepper finely before setting it aside.

Place celery, potatoes, onions, carrot and garlic in a heavy saucepan containing boiled water. Dissolve stock cubes and stir. You can even use a blender to blend the vegetables. This will save time.

Let it cook for 3 to 4 minutes before you reduce the heat. Cook the vegetables till they turn tender. Add tomatoes and chopped pepper and simmer for 10 to 15 minutes. After you remove from heat add basil leaves and season it. Blend it with hand blender or in a food processor till you get thick soup.
