Red Curry Recipes

Thai Red Curry
4 oz chicken breast
4 oz scallops
2 long beans
carrots
a leaf of kaffir lime
a tablespoon of oil
1 ½ red curry paste
2 tbps palm sugar
¼ tbps fish sauce
coconut milk
water.
Method
Cut chicken into small pieces. Cut beans into two inch pieces as well. Slice the carrot. Place a small pot on the heat with cooking oil and allow to heat. Add the red curry paste and sauté it till it is smells aromatic. Put in the chicken and scallops and stir up to coat with the curry paste. Then add the coconut milk, beans, sliced carrots, lime leaves, and the water and allow to boil. Mix in the fish sauce and palm sugar stirring for about 10 seconds.
Ingredients for Red Curry Seafood
½ pound peeled shrimp
½ pound cut sea scallop or bay scallops
1 tbsp olive oil or grape seed oil
2 cups chicken broth
1 cup coconut milk
1 tbsp red curry paste
2 tbsp brown sugar
3 tbsp fish sauce
1 tbsp minced ginger
1 tbsp fresh minced garlic
1 cup Arborio rice
½ cup white wine
1 cup frozen peas
½ cup green beans
1 tbsp unsalted butter
1 Quart cup of chopped cilantro
1 Quart cup of chopped mint
Method
Cut shrimp to small pieces leaving aside about four shrimp whole. Put one tbsp of oil in a pan and sauté the shrimp. Keep aside. Put chicken broth, curry paste, brown sugar, fish sauce and coconut milk in a separate saucepan and heat enough just to simmering point. Heat two tbsp of oil separately under low heat and put ginger and garlic. Keep about 30 seconds and add the rice. Sauté until the rice is toasted. Add the wine. Stir until wine is absorbed. Put two cups of broth and add water till it absorbed. Add shrimp pieces, scallop, green beans and peas. Stir until seafood is fairly cooked. Turn over into serving dish and garnish with the reserved shrimps on top.
