Take a large skillet - in it, lightly sauté the onion, bay leaf, green pepper, okra and garlic in the olive oil. With the help of a large wooden spoon, toss it lightly until the onion is lightly caramelized. Take care to see that the bay leaf does not break apart in the process of cooking - after this, add the salmon, tomatoes, corn and butter, all the while stirring lightly and this should be followed up by the seasoning and the herbs. After this cover and simmer on low heat for approximately 20 minutes. Pepper and salt may be added only if needed (for this, you can taste it to see if salt and pepper is needed).

What turns out now is not a very wet sauce. It is best served on top of white, steamy rice like Thai sauce recipes are served. In the Barbados, it is usual to serve salmon sauce along with corn meal cou-cou which is similar to polenta.
